Recipe Name : Aubergine and Sesame Salad
Ingredients : 1 large aubergine
3 tbsp tahini paste
juice and rind of 1 lemon
1 garlic clove, crushed
pinch of paprika
1 tbsp chopped fresh coriander
Little Gem lettuce leaves
salt and peper
toasted sesame seeds
Method : Cut the aubergine in half, place in a colander and sprinkle with salt. Leave to drain for 30 minutes. Rinse thoroughly under cold running water and drain well. Pat dry.

Place the aubergine halves, skin side uppermost, on an oiled baking sheet. Cook in a preheated oven 230°C/450°F/Gas Mark 8, for 10-15 minutes. Remove from the oven and set aside to cool.

When the aubergine has cooled, cut it into cubes and set aside.

Combine the tahini paste, lemon juice, lemon rind, garlic, paprika and chopped coriander in a bowl. Season with salt and pepper and then stir in the aubergine cubes.

Line a serving dish with lettuce leaves and spoon the aubergine cubes into the centre. Garnish with toasted sesame seeds and serve immediately.
