Recipe Name : Spinach Tortilla
Ingredients : 4 tbsp olive oil
6 spring onions, sliced
250 g/9 oz baby spinach leaves, washed with stems removed
6 large eggs
3 tbsp chopped mixed herbs
2 tbsp freshly grated parmesan cheese
salt and pepper
Method : Add olive oil to a heated, non-stick 25 cm/10 inch frying pan. Add the spring onions and cook for 2 mintes.

Add spinach and cook until it wilts.

Beat the eggs in a bowl and season with salt and pepper. Using a draining spoon, transfer the onions and spinach to the bowl of eggs. Stir in the herbs. Drain off the oil from the pan and keep.

Reheat the pan. Add 2 tbsp of the reserved oil and pour in the egg mixture, ensuring it is spread evenly. Cook for about 6 minutes, shaking the pan occasionally.

Once the base is set, sprinkle the top of the tortilla with the Parmesan and place under a preheated grill for about 3 minutes.

Remove the tortilla from the pan by sliding it onto a large plate. Let stand for 5 minutes before serving.
